Banana Bread
Ingredients:
3 - 4 ripe bananas (mashed)
4 oz margarine (125 g)
1 cup sugar (250 ml)
2 cups flour (500 ml)
3 eggs (beaten)
3 ml salt
5 ml vanilla
½ tsp baking powder
½ tsp bicarbonate of soda
Milk
Method:
*Mixture is enough for one medium/large tin (the tin should be two thirds full of cake mixture)
Cream margarine and sugar
Add bananas
Add eggs and vanilla
Add bicarbonate of soda mixed with some milk
Add baking powder and mix well.
Bake at 180 degrees Celsius for 1 hour in a preheated oven
Allow to cool
Carrot Cake
Ingredients:
250 ml cooking oil
375 ml brown sugar
4 extra large eggs
500 ml whole wheat four (can use cake flour, but whole wheat has better texture)
10 ml baking powder
5 ml ground cinnamon
5 ml nutmeg
3 ml ground ginger
3 ml bicarbonate of soda
3 ml salt
5 ml vanilla essence
750 ml grated carrots
Variation:
Add 125 ml chopped pecan nuts to cake mix
and/or
Add a medium grated pineapple in addition to carrots. If you do this, add another 125 ml of flour as well
Method:
* Mixture is enough for one 1 large bread tin (the tin should be two thirds full of cake mixture) or 2 normal round cake tins
Beat oil and sugar
Add eggs one at a time, beating well
Add sifted dry ingredients
Add vanilla and carrots
Mix well.
Bake at 180 degrees Celsius for 55 minutes in a preheated oven
Allow to cool
Icing:
80 g butter
100 g smooth cottage cheese
500 ml icing sugar
5 ml vanilla
Cream butter and add other ingredients
Don't over mix as icing will become runny
Spread on top of cake
Decorate with chopped nuts if desired.
