Butternut soup
(serves about 5)
Butternut : 4 cups cubed
Carrot : 1 cup cubed
Onion : 1 large - diced
Tomato : 2 medium sized - diced
Honey : 1 tablespoon
Butter (or oil) : 30 gram (2 level table spoons)
Fresh ginger : 1 teaspoon finely chopped
Spices (to taste) : ground nutmeg, ground cloves, ground cinnamon, caraway seeds
Sauté onion, chopped ginger & tomato in butter / oil.
(add the honey & a pinch of salt)
Add 3 cups water (less for a thicker soup).
Add all vegetables
Add salt to taste (approx. 1 ½ teaspoons)
Bring to the boil
Add spices
Turn down heat & simmer for about ½ hour until soft.
Liquidize to taste, but leave some chunky bits for texture.
Variation : Add sour cream or yogurt to taste (just before serving) for a
creamed version.
Geen pea soup
(from The Cranks Recipe Book)
(serves 4 to 6)
Green split peas 8 oz (225 g)
Water 1.2 litres
1 large onion
Butter or margarine 2 oz (50 g)
2 vegetable stock cubes
Salt & pepper to taste
Wash peas well, then soak them in the water overnight (Note: most split peas these days don't require this-check the packaging).
Chop the onion. Melt the butter and sauté onion until transparent.
Add stock cubes to peas and water. Bring to boil and stir until stock cubes dissolve, then simmer for 1 hour.
Season to taste.
If wished, blend soup before serving.
Note:
Emoyeni cooks allow 2 hours cooking time rather than 1, since peas are not pre-soaked.
I prefer to boil the peas separately at first, so that I can skim off the foam as it arises without removing any of the flavouring. When no more foam appears, add the sautéed onions and stock and turn down the heat to simmer for 2 hours.
We allow a 1/2 cup of (uncooked) peas per person, and don't worry to measure out exact quantities of water. Just add enough water that the soup is not sludge.
A nice variety is to add some soya milk.
BROCCOLI SOUP
¾ punnet Broccoli
1 litre Milk
1 pkt White Onion Soup
Grated cheese
Cut up ¾ punnet broccoli into pyrex dish
Add 10ml water and Microwave on High for 10 min
Grind finely in Foodprocessor
Pour 500ml water, 1 litre milk and 1 pkt White Onion soup into a pot and bring to boil
Add broccoli and simmer for 30 mins
Add black pepper and some grated cheese
